German Chocolate Cake
4 ounce package German’s Sweet Chocolate
3/4 cup butter
1 1/2 cup sugar
3 eggs
1 teaspoon vanilla
2 cups all-purpose flour, divided
1 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
Preheat oven to 350°.
Prepare three 9-inch cake pans by oiling the bottom and lining with parchment paper.
Sift together 1/2 cup of flour, the baking soda, and salt. Set aside.
Heat the butter and chocolate until it is melted. If microwaving, microwave for 30 seconds, stir, and continue heating in 10 second increments until the chocolate is completely melted.
Beat together the sugar and the melted chocolate mixture for one to two minutes. Add the eggs, one at a time, until blended. Add the vanilla and mix again until you have a creamy base.
Add the flour, baking soda, and salt that have already been sifted together and mix well.
Alternate adding the remaining flour and the buttermilk. Blend until the batter is well combined.
Fill each cake pan equally. Bake for 25 to 30 minutes. Check for doneness by inserting a toothpick in the middle. You will be looking for a clean toothpick. Remove from the oven when the cakes are done and allow the layers to cool completely before frosting with the coconut pecan icing.
COCONUT PECAN FROSTING
4 egg yolks
12 ounce can evaporated milk
1 1/2 teaspoons vanilla
1 1/2 cups sugar
2/3 cup butter, room temperature
14 ounce package sweetened shredded coconut
1 1/2 cups chopped pecan pieces
In a large saucepan, without heat, whisk the egg yolks, evaporated milk, and vanilla together. Stir in the sugar and butter. Stirring constantly, cook over medium heat until it thickens and turns a light golden brown. This will probably need to boil for 10-12 minutes.
Remove the thickened icing from the heat and immediately stir in the coconut and pecans. Allow the icing to cool slightly before icing the cooled cakes.
Frost between the layers and the top but not down the sides.
