Ingredients for Egg Pepper Masala For frying the eggs: • 4–5 boiled eggs, cut lengthwise into halves • 1 tbsp oil • A pinch of turmeric powder • Salt to taste • A pinch of Kashmiri chilli powder For the pepper masala: • 1 tbsp oil, or as required • 1 tsp fennel seeds • 2 green chillies, roughly chopped • 2 onions, finely chopped • 8–10 curry leaves • 5–6 garlic cloves, crushed • 1 small piece of ginger, crushed • 2 tomatoes, made into a paste • 2 tsp black pepper powder • ½ tsp garam masala powder • Salt to taste • 2 tbsp water • Finely chopped coriander leaves for garnish How to Make Egg Pepper Masala Step 1: Prepare the egg masala coating Heat 1 tablespoon of oil in a pan. Add a pinch of turmeric powder and salt to taste. Mix well, then add a pinch of Kashmiri chilli powder and stir. Step 2: Fry the boiled eggs Add 4–5 boiled eggs, cut lengthwise into halves, with the cut side facing down. Fry for about 1 minute, then carefully flip and fry the other side for another minute, or until lightly golden brown. Remove the eggs from the pan and keep them aside. Step 3: Prepare the tempering In the same pan, add another tablespoon of oil if required. Add 1 teaspoon of fennel seeds and let them sizzle for a few seconds. Step 4: Sauté the green chillies and onions Add 2 roughly chopped green chillies and sauté for a few seconds. Add 2 finely chopped onions and 8–10 curry leaves. Sauté until the onions become soft. Step 5: Add ginger and garlic Add 5–6 crushed garlic cloves and a small piece of crushed ginger. Sauté until the raw smell disappears. Step 6: Cook the tomato paste Add the paste made from 2 tomatoes. Cook on low-medium heat for 3–4 minutes, stirring occasionally, until the tomatoes are cooked and the oil begins to separate. Step 7: Add the pepper masala spices Add 2 teaspoons of black pepper powder, ½ teaspoon of garam masala powder, and salt to taste. Mix everything well. Step 8: Cook the masala Add 2 tablespoons of water and mix well. Let the masala cook for 1–2 minutes on low heat so the spices blend together. Step 9: Add the fried eggs Gently add the fried boiled eggs to the masala. Mix carefully to coat the eggs evenly without breaking them. Step 10: Garnish and serve Finally, add finely chopped coriander leaves and give everything a gentle mix. Your delicious, spicy Egg Pepper Masala is ready to serve! Enjoy it with rice, chapati, roti, dosa, or bread. **Happy Cooking! ❤️ ❤️ Try this recipe and tell us in the comments how you liked it! 👍 Like the video💬 Comment your feedback🔔 Subscribe to Our Daily Bread Food for more easy and delicious homemade recipes.
