Chicken Sopas is the ultimate Filipino comfort food—a rich, creamy chicken macaroni soup that is especially popular on rainy days, cold mornings, or when someone is feeling under the weather.
Unlike Western chicken noodle soups, Filipino sopas gets its iconic rich flavor and golden-creamy broth from evaporated milk and aromatics.
Classic Chicken Sopas Recipe
Ingredients
The Protein:
500g chicken breast or bone-in chicken thighs (boiled and shredded)
1 cup hotdogs or Vienna sausages, sliced diagonally (optional, but traditional!)
1/2 cup chicken liver, diced (optional, for deeper flavor)
The Pasta & Dairy:
2 cups elbow macaroni
1 can (approx. 370ml) evaporated milk
The Vegetables:
1 medium carrot, diced
1/2 small cabbage, shredded
1 stalk celery, finely chopped
Aromatics & Broth:
1 medium onion, chopped
4 cloves garlic, minced
6–8 cups chicken broth (reserved from boiling the chicken, or water + chicken cubes)
2 tbsp butter or cooking oil
Fish sauce (patis), salt, and ground black pepper to taste
Step-by-Step Instructions
Boil & Shred the Chicken:
In a pot, boil the chicken in water with a pinch of salt until tender. Remove the chicken, let it cool, and shred the meat. Save the broth!
Sauté the Base:
In a large soup pot, melt the butter (or heat oil) over medium heat. Sauté the garlic and onion until soft and fragrant. Add the celery, sliced hotdogs, and diced chicken liver (if using), cooking for 2–3 minutes.
Add Chicken & Broth:
Add the shredded chicken to the pot and season with a splash of patis. Pour in the reserved chicken broth and bring it to a boil.
Cook the Macaroni:
Add the elbow macaroni into the boiling broth. Lower the heat to medium and simmer for about 8–10 minutes until the pasta is al dente.
Pro-Tip: Macaroni absorbs a lot of liquid! Keep extra warm water or stock nearby in case you need to loosen up the soup later.
Add Vegetables & Dairy:
Stir in the carrots and shredded cabbage. Cook for another 2 minutes until the veggies are tender-crisp. Pour in the evaporated milk and stir continuously on low heat.
