Garlic Butter Shrimp with Corn is a popular, mouthwatering dish that combines tender, juicy shrimp and sweet corn kernels sautéed in a rich, savory garlic butter sauce. It’s a classic comfort meal known for being quick, easy to make, and packed with flavor. 1 lb (450g) Shrimp: Large or medium, peeled and deveined (tail-on or off) 2 cups Corn: Sweet yellow corn (fresh off the cob, thawed frozen, or drained canned 3 tbsp Unsalted Butter: Divided (1 tbsp for searing, 2 tbsp for the sauce) 1 tbsp Olive Oil 4–5 cloves Garlic: Minced 1 tbsp Fresh Lemon Juice 1/2 tsp Seasoning: Paprika or Cajun seasoning (optional, for flavor & color) Salt & Black Pepper: To taste Fresh Parsley: Chopped, for garnish 2 tbsp Tomato paste 1. Season the Shrimp Pat the shrimp dry with a paper towel. Season with salt, pepper, and paprika/Cajun seasoning (if using). Toss gently to coat evenly. 2. Sear the Shrimp Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the shrimp in a single layer and cook for 1 to 2 minutes per side until pink and opaque. 💡 Tip: Do not overcook the shrimp, or they will become rubbery! Remove them immediately and set aside on a plate. 3. Sauté the Garlic & Corn In the same skillet, turn the heat down to medium and melt the remaining 2 tablespoons of butter. Add the minced garlic and sauté for 30 to 45 seconds until fragrant (be careful not to burn it). Toss in the sweet corn and cook for 3 to 4 minutes, stirring occasionally until the corn is tender and warmed through. 4. Combine & Sauce Return the cooked shrimp (and any accumulated juices) back into the skillet with the corn. Drizzle over the lemon juice and toss everything together for about 1 minute to let the flavors meld. 5. Serve Garnish with fresh parsley and extra lemon wedges.
