In 1833, a ship sailed from Boston to Calcutta carrying New England pond ice, and more than half of it arrived. So how did people keep food cold before fridges? Mostly, they didn't. We go from a Mesopotamian king's boastful ice house and a Chinese bronze cool box to Nero's snow-chilled water, Persian ice domes filled on winter nights, and clay pans of ice in 1770s India. Then the everyday answer: salt, smoke, pickles, larders, spring houses, root cellars and a pig you didn't kill until November. Plus Frederic Tudor the "Ice King", Thoreau watching Walden Pond get sawn up, the iceman's window card, ice famines and dirty rivers, the frozen-meat ship Dunedin, poison gas in early fridges, Freon, Einstein's fridge patent, and what the old tricks are still good for today.
