Today, we’re sitting down with Sakis Tyrnas of Capital City Diner in Albany, New York.
His family restaurant story began in 1984 with the Columbia Diner in Hudson, New York.
More than 30 years and two generations later, the family continues its tradition of hospitality and
classic diner fare at Capital City Diner.
We’re going to talk with Sakis about that family legacy, but we’re also going behind the scenes.
How do you manage costs without sacrificing quality? How do you make purchasing
decisions? Where do you find opportunities to improve margins? And how can
relationships with organizations like PGE and its partners help an independent restaurant
compete and remain profitable?
Sakis, welcome to The Corner Booth. Pull up a chair—let’s talk restaurant business.
