A long charcoal trough and a stack of wire baskets. Squid, octopus tentacles and whole prawns are clamped flat between the wires, laid over the coals and flipped as a single piece so nothing sticks and nothing falls through - the smoke rolls off the grill, the tentacles curl and char at the tips, and everything comes off glossy with a bowl of chilli salt on the side. Then crab soup from a huge pot, a banh mi counter that never stops cutting, bot chien on the griddle, fish cake banh mi, and banh duc ladled hot.
No narration, no staging - just the food and the sound of the street.
