Cumin seeds (Jeera) –1 tbsp
shah Jeera - 1tsp
Coriander seeds (Dhaniya) – 1 cup
Black peppercorns (Kali Mirch) –1 tbsp
Green cardamom (Chhoti Elaichi) –7-8
Black cardamom (Badi Elaichi) –5-6
Cloves (Laung) –1 tsp
Cinnamon sticks (Dalchini) – 2 pieces of 2"
Star anise (Chakra Phool) –5-6
Mace (Javitri) – 5-6
Nutmeg (Jaiphal) – 1
Bay leaves (Tejpatta) –4-5
Moti saunf -1 tbsp
Kabab chini- 1 tbsp
Naag kesar - 1 tsp
Anaar daana -1 tbsp
Spice red chilli - 4-5
Degi laala mirch - 4-5
Pipli - 10 - 12
khaskhas - 1Tbsp
Makhana- 10-12
Roasted Chana- 1 tbsp ( without chilka )
Pro Tips for Best Flavor
Dry Roast on Low Flame: Never roast on high heat; you want the essential oils to release without scorching the spices.
Cool Completely: Let the roasted spices reach room temperature before grinding so steam doesn't make the powder clumpy.
Pulse, Don’t Blend Continuously: Grind in short pulses to prevent the grinder jar from heating up, which can dull the fresh aroma.
Storage: Store in an airtight glass jar away from direct sunlight. Stays fresh for up to 6 months!
