Baked Honey Mustard Chicken & Peach Cucumber Salad | Easy Summer Dinner

Today I'm showing you how to make Baked Honey Mustard Chicken and Peach Cucumber Salad, a fresh and flavorful summer dinner that pairs juicy honey mustard chicken thighs with a sweet, tangy peach and cucumber salad. This recipe came together through a few different pieces of summer inspiration! Earlier this summer, I was on a family trip where my husband and his cousins made a delicious honey mustard chicken with peach and cucumber salad. I loved the combination and knew I wanted to recreate it at home with a few adaptations of my own. Then last weekend, I was visiting my parents at their home in Connecticut, where we picked fresh peaches and fresh mint right from their garden. I'm also still working my way through our incredible surplus of fresh cucumbers this summer, so suddenly I had everything I needed to make my version! The two components of this recipe are meant to be enjoyed together. The chicken is coated in a homemade honey mustard marinade made with whole-grain mustard, honey, lemon and warm seasonings before being baked until juicy and caramelized. Part of that honey mustard mixture is reserved before marinating the chicken and used to dress a fresh salad of peaches, smashed cucumbers, mint and lemon. I love the contrast between the warm, savory baked honey mustard chicken and the cool peach cucumber salad. The peaches bring natural summer sweetness, the cucumber adds freshness and crunch, and the mint and lemon brighten everything up. The shared honey mustard dressing ties the chicken and salad together into one cohesive meal. I'm using bone-in chicken thighs and baking them in the oven, so you don't need a grill to make this summer-inspired chicken dinner. I also boil the leftover chicken marinade after using it so it can become a flavorful honey mustard finishing sauce for the cooked chicken.
