Pumpkin Chhakka: Cut the pumpkin into slightly large chunks; you can use either raw (green) or ripe pumpkin. Add a small amount of potatoes to it, because without potatoes, you won't get that thick, gravy texture needed to pair well with luchi or roti. So, adding potatoes is a must. Heat oil in a wok (kadai) and temper it with dried red chilies, panch phoron (five-spice blend), and turmeric powder. Lightly fry the potatoes in this oil, then add a little salt. No other spices are needed for this dish. Frying the pumpkin along with the tempered spices releases a wonderful aroma, which gives this dish its unique flavor. Fry it patiently for a good amount of time until both the pumpkin and potatoes are about 80% cooked. In another pan, fry a handful of peanuts in oil, crush them slightly, remove the skins, and add them to the 80% cooked vegetables. Along with that, add a little jaggery, because this dish is meant to be a bit sweet and a little more on the spicier side. Throw in a few bay leaves, pour in an adequate amount of water, and cover it for about 10 minutes. After 10 minutes, when the gravy thickens and coats the vegetables evenly, take it off the heat. Your pure veg, wedding-feast style Pumpkin Chhakka is ready! Once you make Pumpkin Chhakka with peanuts, you will forget about chickpeas and want to eat it with peanuts every single time.
