【ブルグルピラウ】挽き割り小麦のピラフ|トルコ料理 Bulgur Pilavı

トルコの挽き割り小麦のピラフ「ブルグルピラウ」を作ります。
English follows Japanese.
お米やパスタとはひと味違う、プチプチとした麦の食感。こんがり炒めた細いパスタの香ばしさに、野菜ブイヨンのうまみと青ネギの香りが重なります。
シンプルな材料だけで、十分においしい!
ケバブや煮込み料理など、中東料理の副菜にぴったりです。
ブルグルには細粒と丸粒があります。今回は丸粒を用意してください。
■ 材料
・ブルグル(丸粒):1カップ
・バーミセリ(または細めのスパゲッティ):10g
・オリーブオイル:大さじ1
・野菜ブイヨン:1個
・水:450ml
・青ネギ:3〜4本
・胡椒:適宜
■ 作り方
1. バーミセリ、または細めのスパゲッティを短く折ります。鍋にオリーブオイルを熱し、パスタを加えて、こんがり色づくまで炒めます。焦がしすぎないように気をつけましょう。
2. ブルグルを加え、全体に油が回るまで炒め合わせます。
3. 野菜ブイヨンと水を加え、フタをして弱火で25分炊きます。
4. 炊いている間に、青ネギを細かく刻んでおきます。
5. 炊き上がったら火を止め、フタをしたまま10分蒸らします。
6. 青ネギの3分の2を加え、全体をほぐすように混ぜ合わせます。
7. お皿に盛りつけ、胡椒をふり、残りの青ネギを散らして完成です。
ディルやイタリアンパセリ、スペアミントを使ってもおいしく仕上がります。今回は、日本で手に入りやすい青ネギをたっぷり使いました。

Bulgur Pilavı — A Taste of Turkey 🇹🇷
This Turkish wheat pilaf combines pleasantly chewy bulgur with golden toasted vermicelli, savory vegetable stock, and fresh green onions.
The toasted pasta adds such a lovely flavor. Just vegetable stock and green onions give this simple dish all the flavor it needs!
A perfect side dish for kebabs, stews, and other Middle Eastern favorites.
Use coarse bulgur for this recipe, rather than fine bulgur.
■ Ingredients
・1 cup coarse bulgur (use a Japanese 200ml measuring cup)
・10g vermicelli or thin spaghetti, broken into short pieces
・1 tbsp olive oil
・1 vegetable stock cube
・450ml water
・3–4 green onions
・Black pepper, to taste
■ Method
1. Heat the olive oil in a pot. Add the vermicelli or broken spaghetti and toast until golden brown, taking care not to burn it.
2. Add the bulgur and stir until evenly coated in oil.
3. Add the vegetable stock cube and water. Cover and cook over low heat for 25 minutes.
4. Meanwhile, finely chop the green onions.
5. Turn off the heat and leave the pot covered for 10 minutes.
6. Add two-thirds of the green onions and gently fluff everything together.
7. Spoon onto a plate, sprinkle with black pepper, and scatter the remaining green onions on top.
Dill, flat-leaf parsley, or spearmint also work beautifully. Here, I use plenty of green onions, which are easy to find in Japan.
