📝 INGREDIENTS (serves 1)
1 chicken leg quarter (about 300–350 g)
15 g soft butter, a few sprigs of thyme, salt and pepper
1 tbsp goose fat or oil
1 large floury potato (about 300 g)
1 carrot and 1 parsnip
1 tsp honey
6–8 Brussels sprouts, halved, plus 1 tsp oil
2 chipolatas and 2 rashers streaky bacon
2–3 tbsp sage and onion stuffing mix
1 frozen Yorkshire pudding
Cranberry sauce, to serve
Gravy: tray juices, 1 tsp plain flour, 150 ml hot chicken stock, a splash of port (optional)
👩🍳 TIMING PLAN – oven at 400°F / 200°C (180°C fan) / Gas 6
Before: heat the fat in a roasting tray. Parboil the potato chunks for 8 mins, drain and rough up.
0 min – Chicken leg (rubbed with butter, thyme, salt and pepper) and potatoes into the hot tray.
15 min – Carrot and parsnip batons.
20 min – Pigs in blankets and stuffing balls.
30 min – Sprouts in, honey over the carrots and parsnip.
45 min – Check the chicken is 165°F / 74°C. Rest the chicken and pigs under foil. Spoon the juices into a small pan and put the tray back for 10 mins.
Last 3–5 mins – Yorkshire pudding (check the packet).
Gravy: heat the juices, stir in the flour, whisk in the stock and simmer until glossy.
💡 TIP: Warm your plate first – it keeps everything hot while you plate up.
⚠️ Make sure the chicken reaches 165°F / 74°C and the sausages are cooked through.
