This week I’m taking one chicken and turning it into three completely different family dinners. I’m using what I already have at home to make chicken and broccoli noodles, Creole chicken chili, and baked chicken flautas. This is another week of making the most of the groceries I already have, stretching ingredients across multiple meals, and keeping dinner simple without feeling like we’re eating the same leftovers over and over again. I also made a simple stir-fry sauce base for the chicken and broccoli noodles. Here’s the recipe: Stir-Fry Sauce Base 1 tbsp sesame oil 5 tbsp light/sweet soy sauce 5 tbsp honey, agave, or maple syrup 2 tsp gochujang 1 tsp rice vinegar 2 cloves garlic, grated 1-inch piece fresh ginger, grated 1/2 tsp cornstarch, mixed with a little water to make a slurry Mix all ingredients together in a bowl or pot. Cook over medium-low heat until the sauce thickens and comes together. Allow to cool completely before storing. Keep refrigerated and use within 5–7 days. #FrugalMeals #BudgetMeals #FamilyDinners #EasyDinnerIdeas #BudgetCooking #WhatsForDinner
