Crete, the largest of the Greek islands, is not only a tourist magnet, it is also becoming a place where more and more young people are choosing to build a new life. Among them are Tina Paidis and Voltas Christodoulidis, who left Athens behind and moved to Crete in search of a more sustainable future. Today, they are business partners running a small cooperative for organic island products. At the heart of their cooperative is carob. Also known as St. John’s bread, the carob tree grows across Crete and is valued for its strength, resilience, and ability to withstand a changing climate. Its pods are rich in nutrients and vitamins and are now being rediscovered in the kitchen - from traditional rusks in dakos salad to cake bases, desserts, and aromatic carob syrup.
