GINGERED CARROTS (pg 580)
2 Tbsp butter
2 Tbsp firmly packed brown sugar OR honey
1/2tsp salt
1/4tsp ginger
1/8tsp cinnamon
4 to 5 medium carrots, sliced, diced, or cut into strips
In medium saucepan, combine all ingredients. Cook covered, stirring occasionally, 20 to 30 minutes or until carrots are tender. 3 to 4 servings.
HOT TURKEY SALAD BUNS (pg 535)
2c cooked cubed turkey (I used chicken)
4oz shredded Cheddar cheese
1/4c chopped celery
1/4c chopped roasted almonds, if desired
1/4tsp salt
1 sweet pickle, chopped
1/2c mayonnaise or salad dressing
4 to 6 hamburger buns
Heat oven to 350. In medium bowl, combine all ingredients except buns; mix well. Fill buns with mixture. Wrap each in foil. Bake at 350 for 15 minutes or until cheese is melted (this took 20 minutes for me). 4 to 6 sandwiches.
APPLESCOTCH CRISP (pg 580)
6c (6 medium) peeled, sliced, cooking apples
1 Tbsp lemon juice
1 Tbsp water
1/4c brown sugar
1/2c flour
1/2c rolled oats
1 tsp cinnamon, if desired
1 - 3.5oz package cook and serve butterscotch pudding
1/2c butter
Heat oven to 375. Place apples in 8 or 9 inch square pan. Sprinkle with lemon juice and water. In small bowl, combine remaining ingredients until crumbly; sprinkle over apples. Bake at 375 for 40 to 45 minutes or until apples are tender. 6 servings.
