Traditional Prawns Curry with Drumsticks & Potato
A flavourful coastal curry made with prawns, drumsticks and potatoes in a freshly roasted coconut masala. Serve with hot boiled rice.
Ingredients
For the curry
500 g prawns, cleaned and deveined
2 drumsticks
2 medium potatoes
2 tomatoes, chopped — substitute with ambade (hog plums) or raw mango
1 onion, sliced
2 tbsp coconut oil
A few curry leaves
Salt, to taste
A little water, for cooking the vegetables
1 cup water, for rinsing the mixer jar
To roast
7–8 Byadgi red chillies
2 tsp coriander seeds
1 tsp cumin seeds
½ tsp peppercorns
½ tsp mustard seeds
¼ tsp fenugreek seeds
1 sprig curry leaves
To add while grinding
1 onion, roughly chopped
4 garlic cloves
½-inch piece ginger
Tamarind, to taste
1 cup grated coconut
A little water
You will need 2 onions in total: one for the curry and one for the ground masala.
Method
Prepare the prawns and vegetables
Clean and devein the prawns. Rinse briefly and drain well.
Lightly scrape the drumsticks and cut them into pieces. Peel the potatoes and cut them into medium-sized cubes. Slice one onion and chop the tomatoes.
Roast the spices
Add all the ingredients listed under “To roast” to a pan. Roast on low heat, stirring regularly, until aromatic. Avoid burning the spices, especially the mustard and fenugreek seeds.
Transfer to a plate and allow to cool completely.
Grind the curry masala
Place the cooled roasted ingredients in a mixer jar. Add the roughly chopped onion, garlic, ginger, tamarind and grated coconut.
Add a little water and grind into a smooth, thick curry paste. Keep aside.
Prepare the curry base
Heat 2 tbsp coconut oil in a kadai over medium heat. Add the sliced onion and curry leaves.
Sauté until the onion softens and begins to change colour. Add the chopped tomatoes and cook until slightly softened.
Cook the potatoes and drumsticks
Add the potato cubes and mix well. Pour in a little water, cover and cook over low to medium heat until the potatoes are almost cooked.
Add the drumstick pieces and simmer until tender, adding only a little more water if needed. The potatoes should be cooked through but still hold their shape.
Add the prawns
Add the drained prawns and salt. Mix gently and cook over medium heat. Do not add water at this stage, as the prawns will release moisture.
Cook briefly until the prawns begin to turn opaque; avoid cooking them fully before adding the masala.
Add the ground masala
Add the prepared curry paste and gently mix it with the prawns and vegetables.
Rinse the mixer jar with 1 cup water and pour this masala water into the kadai. Adjust the salt if required.
Simmer gently
Bring the curry to a gentle simmer, then reduce the heat to low. Cook until the masala loses its raw aroma, the prawns are cooked through, and the flavours blend together. Stir gently so the vegetables remain intact.
Avoid prolonged boiling, which can make the prawns firm.
Rest and serve
Switch off the heat, cover and let the curry rest for 15 minutes before serving.
Enjoy with hot boiled rice!
Note: When using ambade or raw mango instead of tomatoes, adjust the tamarind to suit their sourness.
