In this video, we are making a rich, velvety Ginataang Kalabasa at Sitaw with thick, juicy cuts of pork belly. The secret to this recipe? We mash a portion of the squash directly into the coconut milk to create an incredibly thick, savory sauce that clings perfectly to every vegetable and piece of meat! Pair this with salty bagoong alamang and fragrant ginger, and you have the perfect weekday dinner. Remove the excess oil from the pan. Sauté the garlic, onion, and ginger in the same pan. Stir-fry everything together so all the aromatic flavors combine. Season with ground black pepper and salt. Add two tablespoons of shrimp paste (bagoong alamang). Add seasoning granules (optional). Add the first batch of squash (kalabasa) to let it soften. Pour in the thin coconut milk (second extraction). Bring to a boil and simmer for 30 to 40 minutes. After 15 minutes, remove the squash from the pan and mash it thoroughly. Once the meat is tender, return the mashed squash to the pan. This will thicken and enrich our sauce! Stir well until the mashed squash is completely dissolved into the sauce. Add the second batch of squash, followed by the thick coconut cream (first extraction). Cover and simmer for 6 to 7 minutes. Taste and adjust the seasoning at this point (add more ground black pepper or other seasonings according to your preference). Add the string beans (sitaw) and long green chilis (siling haba). Simmer for another 5 minutes. And there you have it! Our Ginataang Kalabasa at Sitaw with Pork Belly is ready. Get your rice ready, and let's eat! 🏷️ HASHTAGS: #GinataangKalabasa #FilipinoFood #PorkBelly #PanlasangPinoy #FilipinoRecipes #HomeCooking #LutongBahay #lutongbahay #ulamideas
