Welcome to Trieu Tam Tam!
Today, I head into the bamboo forest to harvest fresh bamboo shoots. Some shoots grow deep inside thick bamboo bushes, making them difficult to reach. I first clear away small bamboo branches and other obstacles, then carefully make my way through the dense bamboo grove. Using a sharp knife, I cut firmly at the base of each shoot before breaking it free.
After harvesting enough bamboo shoots, I trim off the leafy tops to make them easier to arrange in my basket. I then carry the heavy basket to the village market to sell. Some customers ask me to peel the bamboo shoots after weighing them, and whenever I have time, I am happy to help remove the tough outer layers.
The next day, I return to the forest for another busy day of harvesting bamboo shoots. This time, instead of selling them fresh, I decide to make traditional dried bamboo shoots, a popular way of preserving food in the Vietnamese countryside.
After bringing the bamboo shoots home, I carefully peel away the outer layers, wash them thoroughly, and boil them until fully cooked. Proper preparation is especially important because raw or improperly cooked bamboo shoots contain natural toxins that can cause food poisoning.
Once the bamboo shoots are cooked, I remove them from the pot and make lengthwise cuts to help them dry more evenly. I then spread them out under strong sunlight, allowing the moisture to gradually evaporate. After several days of drying, once the bamboo shoots are completely dry, I can store them for future meals.
Turning fresh bamboo shoots into dried bamboo shoots is a traditional preservation method in my hometown. It takes time and patience, but it allows us to enjoy the harvest long after the bamboo shoot season has passed.
