Ingredients
• Oil: 2–3 tbsp
• Cumin seeds: 1 tsp
• Garlic (finely chopped): 1 tbsp
• Onion (finely chopped): 2 medium
• Ginger (finely chopped): 1 tsp
• Green chillies (chopped): 1–2
• Tomatoes (finely chopped): 2 medium
• Capsicum / Bell pepper (finely chopped): 1 small
• Butter: 1 tbsp
• Salt: to taste
• Turmeric powder: 1 tsp
• Red chilli powder: 2 tsp
• Coriander powder: 1 tsp
• Kitchen King masala: 1 tsp
• Kasuri methi (dried fenugreek leaves): 1 tsp
• Garam masala: 1 tsp
• Water: 200–250 ml initially, plus extra as needed for desired consistency
• Paneer (crumbled / finely diced): 300 g
• Fresh cream: 2 tbsp
• Fresh coriander (chopped): 2 tbsp
Instructions
1. Temper Aromatics: Heat 2–3 tbsp oil in a pan over medium heat. Add cumin seeds and let them crackle for a few seconds. Add chopped garlic and sauté for 20–30 seconds until fragrant and lightly golden (do not let it burn).
2. Sauté Onions: Add the chopped onions and sauté for 2–3 minutes until soft and lightly golden. Stir in the chopped ginger and green chillies; sauté for another 30–45 seconds until fragrant.
3. Cook Veggies & Base Spices: Add the chopped tomatoes, capsicum, and 1 tbsp butter. Mix and let the butter melt and coat the vegetables for about 30 seconds. Add salt and turmeric powder. Sauté for 3–4 minutes until the tomatoes soften and the capsicum is tender.
4. Add Ground Spices: Stir in red chilli powder and sauté on low heat for 30 seconds. Add coriander powder, Kitchen King masala, and crushed kasuri methi. Cook on low-medium heat for 1–2 minutes, stirring well until the spices release their aroma.
5. Simmer the Masala: Pour in 200–250 ml water and mix well. Cook for 1–2 minutes until the masala turns saucy. Cover with a lid and simmer on low heat for 2–3 minutes to let the flavours meld. Remove lid, stir in garam masala, and cook for 30 seconds.
6. Adjust Gravy & Add Paneer: Add additional water depending on your preferred consistency and simmer for 1–2 minutes until bubbling. Gently fold in the crumbled paneer until evenly combined.
7. Finish & Serve: Add 2 tbsp fresh cream and stir gently on low heat for 1 minute until smoothly integrated. Garnish with fresh coriander leaves, stir gently, and cook for 30 seconds before turning off the heat. Serve hot with roti, paratha, or pav!
