If your oxtails came out tough, you didn't undercook them. Your fire was too high — and every recipe you ever read just said "simmer" and never told you what a simmer looks like. I'm Ruthie Mae, fourth generation in this kitchen. My great-grandmother cooked oxtails because they were the cheapest thing at the butcher counter — what got left after everything worth money walked out the door. Today they're eleven dollars a pound, and there's a restaurant charging thirty-eight for four pieces. Same tail. Same three hours. Nobody added a thing but a menu. In this one I'm walking you through the whole Sunday pot: why you should never boil them first, the twenty minutes of browning that matter more than the last two hours of cooking, exactly how much fat to skim (and how much to leave), and the reduction at the end that turns thin broth into gravy that coats the back of a spoon — no flour, no cornstarch. Full recipe, every measurement, printed below. 🍲 FULL RECIPE Meat & seasoning: 4 lb oxtails, thick center cuts (ask your butcher — skip the skinny tips) 2 tbsp kosher salt 1 tbsp black pepper 2 tsp garlic powder 2 tsp onion powder 1 tbsp paprika ½ cup all-purpose flour (a whisper, not a coating) The pot: 3 tbsp oil, lard, or bacon grease 2 large yellow onions, sliced thick 1 whole head garlic, peeled, cloves whole 3 stalks celery + 2 carrots, big chunks 2 tbsp tomato paste 6 cups beef stock, low sodium 2 bay leaves, 4 sprigs thyme 1 tbsp Worcestershire 1 smoked turkey wing or ham hock (optional — I never skip it) Method: Rinse, pat bone dry, season all over. Uncovered in the fridge overnight if you can. Toss in flour, shake off everything loose. Brown hard in a Dutch oven, medium-high, 3 batches, space around every piece. 4–5 min a side. Deep mahogany, not tan. Don't rush this. Onions + salt, 8–10 min. Garlic, celery, carrot, 3 min. Tomato paste, cook 2 min until it goes brick red. Deglaze with 1 cup stock, scrape every brown bit off the bottom. Oxtails back in with the rest of the stock, herbs, Worcestershire. Liquid ¾ up the meat — not covering. Bare simmer, lid tilted a finger's gap. One lazy bubble every second or two. 3 to 3½ hours. Or 300°F in the oven. Pull the meat. Skim two-thirds of the fat — leave the last third. Lid off, boil the liquid down by a third, 10–15 min. Taste and salt NOW. Oxtails back in, 5 min on low. Done = the meat gives when you push it but still holds its shape. Falling apart is one stage past perfect. Make them the day before. Oxtails are genuinely better on day two — the gelatin sets, the seasoning evens out, and the fat cap lifts off in one piece. 👇 Tell me in the comments — did your family cook oxtails?
