At Kanda Citrus Farm, we compare the plants and fruit, looking at size, leaf shape, gloss and thorns, with a special focus on hana-yuzu and shikuwasa. We also discuss the name “hirami lemon,” seasonal uses, and our experience with fully ripe shikuwasa. The reported sweetness of over 13 degrees Brix and ripening time refer to our own growing experience, not a guarantee for every plant.
