The history of cabbage begins with a bitter, sulphur-tasting weed clinging to sea cliffs near Dover, and ends in nearly every kitchen on Earth. From that one wild plant, farmers bred kale, cabbage, broccoli, cauliflower, Brussels sprouts, and kohlrabi, while two other bitter weeds gave us turnips, bok choy, napa cabbage, canola oil, and spicy brown mustard. Along the way you'll meet a Greek myth about a weeping king, a Korean scientist whose simple triangle mapped the whole family, and Captain James Cook, who tricked his sailors into eating sauerkraut.
