Some evenings I sit down in that chair and my shoes are still on. That is how I
know. The day is over and I am done, and supper has not been started.
Tonight is for those evenings. Ten suppers for when you have got nothing left in
you. Not cheap. Not fancy. Just tired.
And every single one of them comes to the table hot. I am not handing you a cold
bowl of something and calling it dinner. Nothing on this list needs chopping, and
most of it is done inside ten minutes.

1:12 1 · An egg over rice — six minutes, one pan

The fried egg is not a topping on that rice, it is the sauce. Yesterday's
cornbread holds what fresh cornbread cannot. Grits go in the pot cold, not into
boiling water. The gravy for that store chicken is already sitting in the bottom
of the container, and most people pour it down the drain. And the box macaroni
needs butter before it needs water.
