History of the Whitstable Oyster Festival Whitstable’s connection with oysters goes back many centuries. Oyster fishing and cultivation were important to the town’s economy, with oysters from the local waters becoming particularly famous during the 18th and 19th centuries. The modern Whitstable Oyster Festival grew from this maritime heritage. It celebrates the traditional Oyster Opening Ceremony, which marks the start of the town’s oyster season, traditionally associated with St James’s Day (25 July). The festival itself developed into a larger community celebration featuring the Oyster Parade, seafood, music, boats and maritime traditions. It helps preserve and promote Whitstable’s identity as one of England’s best-known historic oyster towns.
