I have seen it countless times. The rice is gummy, clumped together, stuck to the bottom of the pot, and nothing like the fluffy rice you get in a good Chinese kitchen.
The frustrating part is that you may be doing almost everything right.
After 40 years of cooking in Chinese kitchens, I want to show you the simple steps I use to get fluffy, separate jasmine rice every time — and most importantly, the one step almost everyone skips.
*Rinse your rice properly.*
That cloudy white water is carrying away the loose surface starch that can turn your rice into a sticky mess. Once you understand what that starch is doing, the rest of the method starts to make sense.
