I think the beauty of banana bread comes from its simplicity. Only a few relatively accessible and cheap ingredients, and you can bake something amazing. This recipe does not include any nuts or chocolate, although you can definitely add some if you like! Ingredients for banana bread 200g granulated sugar (1 cup) 100g dark brown sugar (½ cup packed + 1 tbsp.) 250g AP flour (2 cups) 3g baking soda (¾ tsp.) 5g baking powder (1 tsp.) 2g nutmeg (¾ tsp.) 5g salt (1tsp.) 150g eggs (3 large) 400g overripe bananas (about 4) 200g unsalted melted butter (14 tbsp.) Ingredients for caramelized bananas 1 or 2 bananas 100g sugar (½ cup) 30g unsalted butter* (2 tbsp.) *PRO TIP: Instead of deglazing with 2 tablespoons of butter, try deglazing with 1 tablespoon of butter and the juice from one passionfruit... your caramelized bananas will taste more like bananas than bananas do. I don't know how that's even possible but it is. Shout out to the amazing Pastry chef Kiyah Syeda for this tip! Ingredients for Whipped cream You can use any amount of whipping cream you'd like, just add a dash of vanilla extract, and add sugar to taste! Here are measurements I have in grams just in case - 200g cold heavy cream (1 cup) 20g sugar (about 2 tbsp.) Dash of Vanilla extract Here is the video on how to make a dry caramel, it has two parts to it!    • Dry Method of Caramelizing Sugar - Video 1      • Dry Caramelization of Sugar -video 2   Notes: There's hardly anything that can go wrong with this recipe, just make sure you mix until the butter is just incorporated, you don't want to overmix the batter otherwise it'll feel a bit gummy because of the overdevelopment of gluten. My oven took about an hour and thirty minutes to bake it, it maybe take a bit less for you or the same amount of time!
