One of my proudest achievements is making this cocktail bun (gai mei bao) recipe at home. The bread is soft and fluffy and the coconut filling is just slightly sweet and buttery. With the slightly sweet coconut flavor it's out of this world. This recipe is similar to the gai mei baos I've had Hop Shing, which has closed its doors.
