Soak them in water for about 1 hour. Drain the water thoroughly. 2. Prepare the coriander: Wash the coriander leaves thoroughly, drain and chop them finely. 3. Make the green paste: Grind the green chillies, garlic and ginger into a fine paste. 4. Grind the lentils: Coarsely grind the soaked and drained lentils in a mixer. Do not make them too smooth. 5. Mix the ingredients: In a large bowl, combine the chopped coriander, green paste and coarsely ground lentils. Add onion-garlic masala, salt, turmeric powder, ajwain and sesame seeds. 6. Add rice flour: Add the rice flour and mix everything well until the mixture binds together and forms a thick dough. 7. Shape the rolls: Apply a little oil to your hands and shape the mixture into long, cylindrical rolls. Grease a plate and arrange the rolls on it. Sprinkle some sesame seeds on top if desired. 8. Steam the rolls: Heat water in a large vessel and place a steaming rack over it. Once the water starts boiling, place the plate with the rolls on the rack. Cover and steam for 15–20 minutes. 9. Check if cooked: Insert a toothpick into a roll. If it comes out clean, the rolls are cooked. Allow them to cool slightly. 10. Cut into slices: Cut the steamed rolls into round slices of your preferred thickness. 11. Fry the vadi: Heat oil in a pan and shallow-fry the slices on both sides until golden brown and crispy. You can also deep-fry them if preferred. 12. Serve: Your crispy and flavourful Kothimbir Vadi is ready! Serve hot with green chutney, tomato ketchup or your favourite dip.
