Boil and mash the sweet potato. Let it cool completely. 2. Mix all the ingredients together just until combined. 3. Refrigerate for 20–30 minutes to help them firm up. 4. Shape into patties. 5. Cook in a lightly oiled skillet over medium heat for about 4–5 minutes per side, turning gently.
