Sugar began as a rare and costly product, but by 1900 Britain was consuming more than eighty pounds per person each year. This video traces the history of sugar from sugarcane in New Guinea and crystallization in India to Atlantic plantations, Barbados, slavery, and the expansion of British consumption. It follows the abolition campaigns that challenged slave-produced sugar, the later reliance on indentured labor, and the rise of European beet sugar through Andreas Marggraf and Franz Karl Achard. Industrial processing, railways, mass retail, and manufactured foods then helped turn sugar from an elite luxury into an everyday ingredient.
