Eggless whole wheat jaggery cake recipe

Whole wheat flour 190 g (1 ½ cups)
Jaggery Powder 120 g (¾ cups)
Milk 1 cup (240 ml)
Neutral Oil ½ cup (100 g)
Baking powder 5 g (1 tsp and 1 pinch)
Baking soda 3 g (1/2 tsp)
Corn starch 5 g
Cake gel foam 2 tsp (normal teaspoon)
Vanilla essence 2 tsp
Vinegar 1 ½ tsp
Add the oil to the whole wheat flour in 2 batches. Mix after every addition.
It will take some time to mix up and form a homogenous paste.
Add the vinegar to the room temperature milk. It will curdle in 5-ish minutes.
Whisk the jaggery powder and vanilla with the curdled milk.
Whisk thoroughly until almost all the jaggery powder is dissolved in the milk.
Add this liquid to the flour oil paste in 2-3 batches.
Mix gently after adding each batch. Use a spatula to mix NOT A WHISK.
Using a whisk will form a lot of gluten and will turn the cake gummy and dense.
Then sift in the corn starch and baking soda and baking powder.
Mix gently to combine.
Then add the cake gel foam and again whisk gently.
Cake gel foam-
Add 2 g of cake gel in ¼ cup of room temperature water. Whisk with an electric whisk on low speed for 3-4 minutes. Mix only until a light airy foam is formed. Do not over whisk or whisk on high speed.
Use 2 tsp of this foam and discard the rest.
Transfer the batter to a 6-inch cake pan with tall sides (3 inch).
Bake at 180 C for 35 minutes only using the lower heating rod.
Check at 30-minute mark.
A skewer inserted in the middle should come out almost clean.
Allow the cake to cool completely for at least 1 hour.
Let it cool for30 minutes in the cake pan. Then remove and cool for another 30 minutes at room temperature.
This video is not meant to disrespect anyone. This kind of video is what I hoped I had found when I was learning to bake by just watching Youtube videos. So, I am hoping that it will help some young emerging bakers to understand the science behind baking. Please do not get discouraged if your cakes don’t look exactly like theirs does.
