झारखंड में बनने वाली डुबकी | Urad Dal Dubki Recipe आज मैं शेयर कर रही हूँ हमारे साइड, झारखंड में बनने वाली बहुत ही simple और tasty उड़द दाल की डुबकी। ये डुबकी गरमा-गरम चावल के साथ खाने में बहुत ही बढ़िया लगती है। अगर आपने इसे पहले कभी नहीं खाया है, तो एक बार जरूर try कीजिएगा। ❤️ Ingredients | सामग्री धुली हुई उड़द दाल (Split Urad Dal) – 1 cup लाल देसी टमाटर (Red Desi Tomatoes) – 3–4 लहसुन (Garlic) – लगभग 15 cloves हरी मिर्च (Green Chilies) – 2 सरसों का तेल (Mustard Oil) – as required साबुत जीरा (Cumin Seeds) – 1/2 tsp हींग (Asafoetida) – a pinch नमक (Salt) – स्वादानुसार धनिया पाउडर (Coriander Powder) – 1 tsp हल्दी पाउडर (Turmeric Powder) – थोड़ा-सा लाल मिर्च पाउडर (Red Chilli Powder) – 1/2 tsp काली मिर्च पाउडर (Black Pepper Powder) – 1/4 tsp हरा धनिया (Fresh Coriander) – बारीक कटा हुआ पानी (Water) – as required Method Wash the urad dal thoroughly with 2–3 changes of water. Add around three times the amount of water, cover and soak for about 3 hours until the dal becomes soft and swollen. While the dal is soaking, finely chop the red desi tomatoes. Crush the garlic and green chillies together. Grind the soaked urad dal into a smooth batter, adding only a little water if required. Add cumin seeds, asafoetida and salt to the batter and mix well. Heat mustard oil in a pan. Add cumin seeds and asafoetida, followed by crushed garlic and green chillies. Sauté briefly and add the chopped tomatoes. Add salt, coriander powder, turmeric, red chilli powder and black pepper powder. Mix everything well, cover and cook until the tomatoes become soft. Mash the cooked tomatoes well so that they mix nicely into the gravy. Add enough water because the urad dal dubki will be cooked directly in this gravy and the gravy will thicken while cooking. Bring the gravy to a good boil. Add the urad dal batter little by little, one portion at a time, while keeping the flame high so the gravy continues boiling. Once all the dubki are added, let it boil well. Then reduce the flame to medium and cook for about 5–6 minutes, until the dubki becomes lightly firm and the gravy thickens. Finally, switch off the flame and add finely chopped fresh coriander. Mix gently.
