A cold, rainy day called for all things cozy. 🌧️ Started by showing a few cute little new items I picked up, then spent the afternoon baking a carrot cake, and putting on new bedsheets — a warm cake, new sheets, and a good book felt like the perfect combination. Got a little hungry before dinner, so I made some guacamole and chips to hold me over. 🥑 00:00 Intro 00:37 New little items 00:52 Baking carrot cake 04:35 New bedsheets 05:25 Making guacamole 🥕 Moist Carrot Cake Ingredients: 220 g flour 80 g sugar 1 tsp baking powder 1 tsp baking soda ½ tsp salt 3 eggs 120 g melted butter 200 g carrots, grated Dates, chopped — to taste Cashews, chopped — to taste Vanilla — to taste For the topping: Carrot ribbons Sugar syrup Method: 1. Grate about 200 g of carrots and squeeze out some of the excess juice. Save the juice to make fresh carrot juice. 2. Melt the butter and mix it with the sugar and eggs. 3. Add the carrots, chopped dates, and cashews. 4. Add the vanilla. 5. Slowly add the dry ingredients and gently mix until everything is combined. 6. Place some carrot ribbons at the bottom of the baking pan and pour a little sugar syrup over them. 7. Pour in the cake batter and bake at 180°C for 40–45 minutes, or until a toothpick inserted into the center comes out clean. 8. Let it cool slightly, then slice and enjoy! 🍰🥕 Thank you for spending this cozy rainy day with me 💛 #slowliving #carrotcake #cozyday
