In this video I am making Sue Becker's apple muffins! They are incredibly moist, naturally sweetened with fresh apples and honey, and made with 100% freshly milled whole grain spelt flour. These delicious muffins are perfect for a healthy breakfast, snack, or anytime. I did make a few changes to Sue's recipe. So I am posting the recipe here for you: Fresh-Milled Flour Apple Cinnamon Muffins (adapted from The Bread Beckers Recipe Collection) INGREDIENTS FOR MUFFINS: 2 1/4 cups freshly milled spelt flour (I use organic) 1 teaspoon salt 1 teaspoon baking powder 1 teaspoon cinnamon (See below) 1 teaspoon baking soda 1 cup buttermilk 1 egg 1/2 cup olive oil 1/2 cup honey 1 teaspoon vanilla 1 medium apple, diced (Try to get organic apples) INGREDIENTS FOR CINNAMON-SUGAR TOPPING: 2 Tablespoons melted butter 1/2 cup cane sugar (I use organic cane sugar) 2 teaspoons cinnamon (I use organic) INSTRUCTIONS: Measure flour, salt, baking powder and cinnamon into a mixing bowl. Stir to combine. Stir baking soda into buttermilk and set aside. In another bowl, add egg, olive oil, honey, and buttermilk/baking soda mixture and vanilla. Mix just until well blended. Add wet ingredients all at once into flour mixture. Stir just until combined. Fold in apples gently. Using a cookie scoop, drop batter into a greased muffin pan cups or use paper liners. Spray paper liners lightly if using them. Bake at 400 degrees for 5 minutes, then lower oven temperature to 375 degrees to finish baking--about 7-8 minutes. Check with a toothpick to see if muffins are done before removing from oven. If not done, bake longer, checking every couple of minutes. While muffins are baking, melt butter in a cup. Stir cinnamon and sugar topping ingredients together. When muffins come out of the oven, brush tops with melted butter, then either sprinkle the cinnamon-sugar topping on each or dip each muffin in the cinnamon-sugar mixture. Let cool. NOTE: If you choose to make the standard 12 muffin size pan, they may bake for 15 minutes. ENJOY!!!
