NEVER Boil Your Potatoes Again — Try This 1,000-Year-Old Peruvian Trick Mijo, lift the lid on that pot with me. Gray. Cracked. Watery at the bottom of the bowl, and it tastes like nothing. It was never you. Nobody ever told you that a potato is a little sponge, and that most of us boil it the wrong way from the very first minute. The potato was born in Peru. We have more than three thousand kinds, and Peruvian grandmothers have been boiling them for generations. In this one, I show you the old Peruvian way, and then I turn one pot of potatoes into three classic dishes. ⭐ THE OLD PERUVIAN WAY (Recipe 7, page 24) Yukon Gold potatoes, the closest to Peru's papa amarilla. Similar size. Skin ON. The skin is a jacket: water out, flavor in. Start in COLD water, 1 inch above the potatoes. 1 tbsp salt per quart of water. It should taste like the sea. Gentle simmer, 20 to 25 minutes. A hard boil cracks them. Check ONCE with a thin knife, not a fork. THE SECRET: drain, put them back in the warm empty pot, no lid, 3 to 5 minutes. Let them breathe. ⭐ THREE DISHES FROM ONE POT 1. Papa a la Huancaína: potatoes in creamy ají amarillo cheese sauce (page 26) 2. Causa Limeña: cold layered lime and yellow pepper potato cake (page 28) 3. Papa Rellena: crispy stuffed potatoes with a sweet-and-salty beef filling (page 30) Bonus: Papas Doradas, crispy golden leftover potatoes for breakfast (page 32) THE HONEST WORDS: Watery and gray → peeled first, or started in boiling water. Cracked and falling apart → the water was boiling too hard. Bland inside → not enough salt in the water. Still hard in the middle → five more minutes at a gentle simmer. Never turn up the fire. Papa rellena falling apart in the oil → the mashed potato was still warm. It must be cold. Where to find ají amarillo paste in the U.S.: the Latin aisle at Walmart, any Latin grocery store, or online. Tell me in the comments: where are you watching from, and how did your mother cook her potatoes? Tell me her name. I read every one. Mamá Lucha is an AI-animated character.
