🛒 Ingredients You'll Need
The Ultimate Bhajani (Flour Mix):
Bhajani Flour / Multi-grain Flour: 1.5 cups (If you don't have ready-made Bhajani, mix equal parts of Jowar, Bajra, Whole Wheat, and Besan flour)
The Fresh Aromatics:
Onion: 1 medium (finely chopped)
Fresh Coriander (Cilantro): ½ cup (finely chopped)
Green Chillies: 2-3 (finely chopped or minced)
Ginger-Garlic Paste: 1 tsp
The Spice & Crunch Mix:
Cumin Seeds (Jeera): 1 tsp
Carom Seeds (Ajwain): ½ tsp (crushed between palms)
Sesame Seeds (Til): 1 tbsp
Turmeric Powder: ½ tsp
Red Chilli Powder: 1 tsp
Salt: To taste
For Cooking:
Water: Warm water for kneading (approx. ¾ cup)
Oil / Ghee: 3-4 tbsp for roasting
In a large mixing bowl, combine the flour mix, chopped onions, coriander, green chillies, and ginger-garlic paste.
Add all the spices: cumin, carom seeds, sesame seeds, turmeric, red chilli powder, and salt.
Mix everything well dry first so the onions release some moisture.
Gradually add warm water and knead into a soft, pliable dough. Let it rest covered for 10 minutes.
Take a clean, damp cotton cloth or a sheet of parchment paper and place it on your rolling board.
Take a lemon-sized ball of dough and place it in the center.
Wet your fingers with water and gently pat the dough ball into a flat, round circle (about ¼ inch thick).
Make 3 to 4 small holes in the thalipeeth using your finger—this helps in even roasting and absorbing ghee/oil.
Heat a non-stick or cast-iron tawa (griddle) on medium flame and grease it with a little oil or ghee.
Carefully lift the cloth/parchment paper and flip the thalipeeth onto the hot tawa, peeling the cloth away gently.
Drizzle a few drops of ghee or oil into the holes and around the edges.
Cover it with a lid and cook on medium heat for 2–3 minutes until the base turns golden brown and crispy.
Flip it over and roast the other side without the lid until dark golden spots appear.
Serve it piping hot straight off the griddle with a dollop of white butter (Loni), fresh yogurt, or an authentic spicy garlic chutney (Shengdana/Lasan Chutney).
