Most people say "it's how hot something is" — which isn't an answer. That's just saying the word twice with different letters. And here's the part that should bother you: temperature isn't a substance. It isn't a fluid. It isn't even a property of an object the way mass or color is. When you touch something hot and feel heat flow into your hand like a real physical stuff, that feeling is completely, fundamentally wrong. For centuries it fooled even the smartest scientists, who believed heat was an invisible fluid called "caloric" that poured from hot things into cold ones — until a cannon barrel being drilled kept producing heat that never ran out, and the whole idea collapsed.
