Country-Style Sloppy Joes for Two
Ingredients
Ground Beef: 1/2 pound (80/20)
Aromatics: 1/4 cup finely diced yellow onion and 1 small clove minced garlic (or a pinch of garlic powder)
The Sauce:
1/3 cup ketchup
1 tablespoon yellow mustard
1 tablespoon brown sugar (or honey)
1 teaspoon Worcestershire sauce
1 tablespoon tomato paste (optional, adds extra body)
2 tablespoons water or beef broth
Seasoning: 1/4 teaspoon salt, 1/4 teaspoon black pepper, and a dash of smoked paprika or chili powder
To Serve: 2 hamburger buns (toasted)
Instructions
1. Brown the Beef: Heat a medium skillet or cast-iron pan over medium-high heat. Add the ground beef and diced onion. Cook until the beef is fully browned and the onions are soft and translucent, breaking the meat up finely as it cooks. Drain off any excess grease.
2. Mix the Sauce: While the beef browns, whisk together the ketchup, mustard, brown sugar, Worcestershire sauce, tomato paste, and water in a small bowl.
3. Simmer Together: Pour the sauce mixture directly into the skillet with the beef and onions. Add the garlic, salt, pepper, and paprika. Stir everything well to coat.
4. Thicken: Reduce the heat to medium-low and let the mixture simmer uncovered for 5 to 7 minutes, stirring occasionally, until the sauce is thick, glossy, and reduced.
5. Serve: Spoon the hot, hearty meat mixture generously over two lightly toasted hamburger buns.
