Amritsar food, tandoori chicken and the complete behind-the-scenes process at Bubby Fish & Chicken Corner. In this episode of Beyond Boundaries with Vinit, Vinit Kapoor visits Bubby Fish & Chicken Corner near Crystal Chowk, Amritsar, to see how their famous tandoori chicken is prepared, cooked in the tandoor and finally tasted fresh.
The process starts with a massive batch of around 50 chickens. Jasmeet takes Vinit through the tandoori chicken recipe and marination process, starting with salt, fresh garlic paste, ginger, mustard oil, ajwain (carom seeds), chilli, coriander powder and other natural spices. The chicken is mixed and massaged so the flavours can penetrate deep into the meat, followed by a short resting period before the chicken is put onto skewers and cooked in the tandoor.
Jasmeet also explains why they use fresh garlic, how they avoid vinegar, and how the natural chilli gives the chicken its colour instead of artificial colouring. The marinade is finished with a small amount of garam masala and their special spice mixture before the chicken is rested and prepared for the tandoor.
Then comes the part that makes this Amritsar food experience special: tandoori chickens coming straight out of the tandoor, with the juices dripping from the chicken and the meat becoming so tender that Vinit demonstrates how easily it breaks apart. The chicken is approximately 70–80% ready at this stage before the final cooking and steaming process.
The episode also goes beyond the food. At Bubby Fish & Chicken Corner's new outlet, Jasmeet shares the story of the family's food business and its legacy. He explains that the family first started working with sweets in 1958, followed by his father's meat business, with the first pot of mutton being prepared in 1972 and around 40 kg sold on the first day.
Finally, Vinit sits down to taste the finished tandoori chicken in Amritsar. He looks at the presentation, including the cabbage, turmeric-coloured garnish and two types of onions, then adds lime and green chutney before trying the chicken.
Vinit's review focuses on the tenderness of the chicken and, more importantly, how deeply the spices have penetrated into the meat. He also highlights the difference between simply cooking and serving food and making food with genuine care and love, noting that the chicken does not rely on excessive butter, oil or ghee.
