✨ INGREDIENTS:
• 2 cups Basmati Rice
• 3–4 medium Potatoes, cut into cubes
• ½ cup Oil
• 1 large Onion, thinly sliced
• 2–3 Tomatoes, chopped
• 1 tsp Ginger Garlic Paste
• 1 tsp Cumin Seeds (Zeera)
• 2 Bay Leaves
• 1 small Cinnamon Stick
• 3–4 Whole Black Pepper
• 1 tsp Salt or to taste
• ½ tsp Turmeric Powder
• 1 tsp Red Chili Powder
• 1 tsp Coriander Powder
• Approximately 3 cups Hot Water
👩🍳 COOKING METHOD:
Step 1 – Prepare the Rice:
Wash the basmati rice thoroughly until the water runs mostly clear. Soak the rice for about 20–30 minutes, then drain and set aside.
Step 2 – Fry the Onion:
Heat oil in a pot over medium heat. Add the sliced onion and fry until beautifully golden brown.
Step 3 – Add Whole Spices:
Add cumin seeds, bay leaves, cinnamon stick and whole black pepper. Sauté for a few seconds until fragrant.
Step 4 – Prepare the Masala:
Add the chopped tomatoes, ginger-garlic paste, salt, turmeric powder, red chili powder and coriander powder. Mix well and cook until the tomatoes soften and the oil starts to separate from the masala.
Step 5 – Cook the Potatoes:
Add the cubed potatoes and mix thoroughly so they are coated with the masala. Add a little water, cover and cook until the potatoes are slightly tender.
Step 6 – Add the Rice:
Add the soaked and drained basmati rice. Gently mix the rice with the potatoes and masala, being careful not to break the rice.
Step 7 – Add Water:
Pour in approximately 3 cups of hot water. Taste the water and adjust the salt if needed. Bring everything to a boil over medium-high heat.
Step 8 – Cook the Rice:
Cook uncovered until most of the water has evaporated and you can see the rice on the surface.
Step 9 – Dum:
Reduce the heat to very low. Cover the pot tightly and cook on dum for 10–12 minutes.
Step 10 – Serve:
Turn off the heat and let the Tahiri rest for a few minutes. Gently fluff the rice with a fork.
