Making a flawless, aromatic Chicken Dum Biryani comes down to balancing the marinade and par-boiling the rice to the perfect percentage so it finishes beautifully during the dum (slow steam) process.
Ingredients:
1] For the Chicken Marinade:
Chicken: 500g (bone-in, medium cuts yield the juiciest results)
Yogurt (Dahi): 1/2 cup (thick, whisked)
Ginger-Garlic Paste (Adrak-lehsun): 1.5 tablespoons
Red Chili Powder (Lal mirch): 1.5 teaspoons (adjust to taste)
Kashmiri Chili Powder: 1 teaspoon (for a rich, vibrant color)
Turmeric Powder (Haldi): 1/2 teaspoon
Biryani Masala or Garam Masala: 1 teaspoon
Nutmeg (Jaiphal) & Mace (Javitri) Powder: 1/2 Teaspoon
Fried Onions (Birista): 1/2 cup (tightly packed, crushed slightly)
Fresh Mint & Cilantro (Pudina, Dhaniya): 1/4 cup each, finely chopped
Green Chilli (Hari mirch): 3-4 Slit
Dry Kasuri Methi: 2 tablespoon
Lemon Juice (Nimbu ka Ras): 1 tablespoon
Oil/Ghee: 2 tablespoons (use the leftover oil from frying the onions for incredible depth of flavor)
Salt (Namak): 1 teaspoon (or to taste)
2] For the Rice:
Basmati Rice: 500g (approx. 2.5 cups, soaked for 30 minutes)
Whole Spices: 1 Bay leaf, 1 Small Cinnamon stick, 2 green Cardamoms, 2 Cloves, ½ tsp Shahi jeera (caraway seeds), 3 Black Pepper
Oil/Ghee: 1 tsp
Mint & Coriander leaves: 1/4th Cup
Lemon Juice: ½ tsp (keeps the rice white and fluffy)
Salt: 2 tbsp (the water should taste as salty as sea water)
3] For the Layering & Dum:
Ghee: 1–2 tbsp
Saffron Milk: ¼ cup warm milk mixed with a pinch of saffron strands (or organic yellow food color)
Fried Onions: ¼ cup
Fresh Mint & Coriander: A small handful
Dough or Aluminum foil: To seal the pot
Step-by-Step Method:
1.Marinate the Chicken:
Prep: 30–60 mins.In a heavy-bottomed pot (handi), combine the chicken with all the ingredients listed under the marination section. Mix thoroughly, massaging the spices into the meat. Cover and let it rest for at least 30 minutes (refrigerated for 2 hours yields best results).
2.Boil the Rice to 70%:Timing: 5–6 mins.
Bring a large pot of water to a rolling boil with the whole spices, salt, oil, and lemon juice. Add the soaked rice. Cook for exactly 4 to 5 minutes until the rice is about 60% cooked (it should still have a firm bite or 'kanni' in the center). Drain immediately, reserving ½ cup of the starchy rice water.
3.The Layering Process:
Assembly.Ensure your marinated chicken forms an even layer at the bottom of the pot. Layer the hot, drained rice smoothly over the chicken. Pour the saffron milk, melted ghee, and reserved rice water over the top. Garnish evenly with the remaining fried onions, mint, and coriander.
4.The Dum (Steam Cook):Cooking: 30 mins.
Seal the rim of the pot tightly with aluminum foil or a rim of wheat dough, then press the lid down firmly. Place the pot on high heat for 5 minutes. Then, place a heavy flat tawa (griddle) underneath the pot, turn the flame to low, and let it cook on 'dum' for 20-25 minutes.
*Crucial Tip:
Once the 20-25 minutes are up, turn off the flame but do not open the lid immediately. Let the biryani rest unopened for 15 minutes. This allows the steam to settle back into the rice grains, preventing them from breaking when you fluff and serve.
When serving, always dig from the side of the pot to get a perfect blend of fragrant white rice, saffron rice, and the rich masala chicken from the bottom.
