The day before an interview.
Feeling a little nervous about tomorrow, I started the morning slowly with some sayu — warm water — went over the role one more time, and did some final preparation for the interview.
For lunch, I made a simple vegetarian koya tofu dish with cheese.

🍽️ RECIPE
CHEESE-STUFFED KOYA TOFU
Ingredients (Serves 1)
• 2 pieces koya tofu (freeze-dried tofu)
• 2 slices cheese
• A pinch of salt
• Salt and pepper, to taste
• A small amount of garlic
• About 1 tbsp potato starch
• 1–2 tsp cooking oil
• 5 g butter, optional
• 1/2 tsp soy sauce, optional, for finishing
1. Rehydrate the koya tofu
Rehydrate the koya tofu in warm water according to the package instructions.
Once softened, gently press and rinse it a few times in the water.
2. Squeeze out the water
Place each piece between both hands and gently press several times to remove as much water as possible.
Be careful not to squeeze so hard that the tofu falls apart.
3. Make a pocket
Carefully cut into the side of each piece of koya tofu without slicing all the way through, creating a pocket for the cheese.
If your koya tofu is particularly thick, you can reduce the thickness slightly.
4. Season
Season both sides with salt and pepper, then lightly rub with a small amount of garlic.
5. Add the cheese
Fold the cheese so that it fits inside the koya tofu without sticking out too much, then tuck it into the pocket.
6. Coat with potato starch
Lightly dust the entire surface with a thin layer of potato starch.
7. Pan-fry
Heat the oil in a frying pan over medium to medium-low heat.
Cook for about 3 minutes on each side, or until nicely golden brown.
8. Finish
Add 5 g of butter at the end, if using, and gently coat both sides.
For a little more flavor, add 1/2 tsp soy sauce around the edge of the pan and turn off the heat immediately.
