Pumpkin Spice, Salted Caramel Bundt Cake 🎃 I used this recipe but tweaked it Delicious Pumpkin Bundt Cake - Mom With Cookies My version: A deliciously spiced autumn bundt cake, perfect for cosy autumn days! Ingredients ● 350g unrefined caster sugar and light muscovado sugar (a 50/50 mix) ● 225g salted butter ● 4 eggs ● 450g pumpkin purée ● 1 teaspoon cider vinegar ● 2 teaspoons ground cinnamon ● ½ teaspoon ground cloves ● 1 teaspoon ground nutmeg ● 1 teaspoon bicarbonate of soda ● 1½ teaspoons baking powder ● 375g plain flour Method 1. Preheat your oven to 160°C. 2. Grease your bundt tin with baking spray or butter and dust with flour. 3. Sift the flour, cinnamon, cloves, nutmeg, bicarbonate of soda and baking powder into a bowl and mix together. 4. Cream the butter and sugars together until light and fluffy. 5. Add the eggs, pumpkin purée and vinegar, mixing well until combined. 6. Gradually add the dry ingredients and mix until just combined. Avoid overmixing. 7. Pour the batter into your prepared bundt tin. 8. Bake for approximately 40 45 minutes, or until a wooden skewer inserted into the cake comes out clean. 9. Allow the cake to cool before carefully turning it out of the tin. For the sauce: 360ml double cream (heavy whipping cream) 100g light brown sugar 3 tbsp / approximately 60g black treacle (or molasses) 57g unsalted butter 1. Mix together on medium heat. 2. Boil for 1-2 minutes. 3. Allow to cool for a few minutes before pouring. 🍂 A cosy autumn vlog filled with autumn decor, a delicious pumpkin spice salted caramel Bundt cake, and a slightly spooky forest walk in Wales.
