15 Minute Burst Cherry Tomato Pasta

Note: This recipe serves 8. To reduce servings, cut all ingredient measurements in half.
Ingredients:
1 pound spaghetti pasta (or any of your favorite pasta shapes will work)
1/2 cup olive oil
2-3 large garlic cloves, finely chopped
3 pints cherry tomatoes (about 6 cups)
1/2 teaspoon ground black pepper
Pinch of sugar
1 teaspoon salt
1 cup finely chopped basil
Grated Parmesan cheese, for serving
Optional: Add onion and bell pepper for more flavor and veggies!
Directions:
1. Cook pasta according to package directions. Once cooked, reserve 1 cup of pasta water and drain pasta.
2. In a large skillet, heat olive oil over medium heat. Add garlic, tomatoes, black pepper, sugar, and salt. Cover the pan and cook, stirring occasionally, until tomatoes burst and release their juices to form a sauce, about 6-8 minutes.
3. Toss pasta into the sauce and stir until pasta is fully coated. Add the fresh basil and stir. Add a little reserved pasta water, if needed, to thin the sauce to your desired consistency.
4. Top with Parmesan cheese before serving.
5. Refrigerate leftovers in an airtight container within 2 hours.
