I came to Delhi with one mission: find out if the city’s most famous chole kulche is actually worth the hype. Before taking my first bite, I watched the entire process from the moment the restaurant opened. Huge amounts of onions, tomatoes, spices and chickpeas are slowly cooked into a rich, creamy chole, while the kulchas are soaked in buttery, caramelised onions packed with masala.
