Today on Bay Built, we’re cooking one of Newfoundland’s most traditional meals — Jiggs dinner.
For anyone who’s never had it before, Jiggs dinner is a traditional Newfoundland boiled dinner made with salt meat and vegetables like potatoes, turnip, carrots and cabbage. Around our house, we usually make a bit more of a feed out of it and add roast meat, chicken, dressing and gravy alongside it.
For this one, the carrots and cabbage came straight out of our own garden, and we served it up with roast beef, stuffed chicken, salt pork, dressing, bottled beets, mustard pickles and plenty of gravy.
