Yucatán is revered for it's punchy, earthy, tangy cuisine and it has roots in the great ancient Mayan civilization. In this episode of Pati's Mexican Table, I'm in Yucatán to cook traditional Mayan dishes with Dona Irma and her family at Aldea Xbatun - and we join in a birthday party that happens to be the same day we arrive! We also explore a cenote, the beautiful natural freshwater pools in caves that the Mayans saw as gateways to the underworld. We don't end up in the underworld, but we do end up back in my kitchen to cook a few incredible Mayan dishes - the dip found all over Yucatán known as Sikil Pak and a nurturing Chaya Soup with fresh herb tortillas to dip in it.
