. Roasting Ingredients (0:14 - 4:26): Roast chana dal (Bengal gram) and urad dal (black gram) separately (1/4 kg each) on low heat until they turn reddish-brown. Dry roast coriander seeds, cumin seeds, mustard seeds, black sesame seeds, black peppercorns, and curry leaves until aromatic. Separately roast dry coconut, tamarind, and Byadgi red chilies until crispy. 2. *Grinding (4:30 - 8:03): Allow all ingredients to cool down. Grind the roasted dals into a coarse powder. Separately grind the coconut, tamarind, and jaggery into a coarse paste or powder. Combine all the ground mixtures thoroughly. 3. *Tempering/Seasoning (8:11 - 10:19): Heat 100g of cooking oil in a pan. Add urad dal, chana dal, mustard seeds, cumin, and raw peanuts (groundnuts). Fry until the dal turns brown and the peanuts are roasted. Add curry leaves, asafoetida (hing), red chili powder, and salt to the tempering. Let this tempering mixture cool completely, then mix it thoroughly into the prepared spice powder. Storage: Once the mixture is completely cool, store it in an airtight glass container. It stays fresh for 1-2 months and makes preparing delicious Puliyogare quick andt convenient.
