Whether you're preparing Deepavali sweets for your family or learning a traditional recipe for the first time, this video will guide you through the process step by step. 🌼 IN THIS VIDEO ✨ Preparing homemade rice flour ✨ Melting and straining jaggery ✨ Checking the jaggery syrup consistency ✨ Mixing the adhirasam dough ✨ Resting the dough ✨ Shaping the adhirasam ✨ Deep-frying until golden brown ✨ Revealing the finished homemade sweet ━━━━━━━━━━━━━━━━━━━━ 🛒 INGREDIENTS — HOMEMADE ADHIRASAM • 400 g raw white rice (approximately 2 cups) • 300–350 g dark jaggery • Approximately 120 ml water for the jaggery syrup • 1 teaspoon cardamom powder • ¼ teaspoon dry ginger powder (optional) • 1 tablespoon white sesame seeds (optional) • 1 tablespoon ghee • Neutral oil for deep-frying • A little oil or ghee for shaping Approximate yield: 16–20 medium adhirasam, depending on the size and thickness. ━━━━━━━━━━━━━━━━━━━━ 👩🏻‍🍳 HOW TO MAKE ADHIRASAM Wash the rice thoroughly and soak it for 2–3 hours. Drain the rice well, leaving it slightly damp. Grind the rice in batches into a fine flour and sift it. Break the jaggery into smaller pieces. Melt the jaggery with water and strain out any impurities. Heat the strained syrup until it reaches the appropriate soft-ball consistency. Turn off the heat and gradually mix in the rice flour. Add cardamom, optional dry ginger, sesame seeds and ghee. Mix into a moist, pliable dough. Cover the dough and allow it to rest according to your chosen recipe method. Divide the dough into equal portions and shape into discs. Deep-fry in oil at approximately 170–175°C, adjusting the temperature as needed. Fry until golden brown, drain carefully and gently press out excess oil. Allow the adhirasam to cool before serving or storing. 💡 Sha's Kitchen Tips • The consistency of the jaggery syrup is crucial for a good result. • Add the rice flour gradually to help achieve a pliable dough. • Avoid adding too much extra flour, as this can make the finished adhirasam hard. • Maintain a steady frying temperature to help the adhirasam cook evenly. • Resting times can vary between traditional recipes. In Malaysia's warm, humid climate, keep the dough covered and refrigerate it if it needs to rest for an extended period. Bring it towards room temperature before shaping. • Hot jaggery syrup and frying oil can cause serious burns, so handle them carefully. ━━━━━━━━━━━━━━━━━━━━ 🪔 A LITTLE DEEPAVALI TRADITION Adhirasam is a traditional sweet associated with Tamil and South Indian festive cooking.
