Red Velvet Cinnamon Rolls
(9 rolls)
Dough
Warm milk 160ml
Vinegar 1/2 Tbsp (7g)
Bread flour 380g
Unsweetened cocoa powder 2 Tbsp
Skim milk powder 1 Tbsp
Sugar 50g
Salt 1 tsp
Instant dry yeast 5g
Melted unsalted butter 50g
Egg 1
Red food coloring 1-2 tsp
Filling
Unsalted butter 40g
Brown sugar 50g
Cinnamon powder 1 1/2 Tbsp (about 11g)
Salt 1/4 tsp
Cream Cheese Frosting
Unsalted butter 30g
Cream cheese 55g
Vanilla paste 1 tsp
Powdered sugar 95g
1. First, prepare buttermilk. Mix warm milk with 1/2 tablespoon vinegar. Let it for 10 minutes. When small lumps get form, ready to use.
2. In a clean bowl, combine all ingredients except the food coloring. Once the dough has come together, add the food coloring little by little to create the desired color. Transfer the dough to a work surface and start kneading. Knead thoroughly until smooth and elastic (about for 10-13 minutes).
3. Transfer the dough to a clean bowl and let it rise in a warm place for about for 1-1.5 hours.
4. Meanwhile, prepare the filling. Take the butter out of the refrigerator and let it come to room temperature. And mix together the brown sugar, cinnamon powder, and salt.
5. Roll out the dough into a rectangle using a rolling pin. Spread the soft, room-temperature butter over the surface of the dough and sprinkle the cinnamon sugar evenly over it. Divide the dough into 9 evenly sized pieces and roll them into rolls.
6. Place the dough in a pan lined with parchment paper. Cover and let rise in a warm place for about 1 hour.
7. Bake in a preheated oven at 175°C (355°F) for about 20-23 minutes. At this time, prepare the frosting. Cream the soft, room-temperature unsalted butter and cream cheese thoroughly for about 3-4 minutes. Then, add the vanilla paste and powdered sugar and mix gently to remove any lumps.
8. Let the baked cinnamon rolls cool slightly before topping with the frosting.
